Watermelon Shrub Smoothie
|Watermelon shrub smoothies are an EASY and healthy way to get probiotics into your fruit smoothies! We continue our series from Pickled Watermelon with Mint & Ginger to cook it, store it, preserve it, or share it! Why not make a shrub from your preserved watermelon rind and turn into a superfood smoothie based on this old fashioned favorite!
Shrubs are cocktail mixes typically made with fruit, sugar, vinegar and alcohol. Your fruit can be the sweetner, no need to add any extra sugar! And of course, make the unprocessed version with apple cider vinegar!
Fermented drinks have been around for centuries including tepache which is a tradiontal mexican fermented pineapple drink. But our version in this Fermented Pineapple Fruit smoothie uses left over pineapple peals and no added sugar that mixes with a variety of smoothie combinations. The natural sugar in the pureed pinapple can ferment your drink perfectly! Just mix cucumber or mango to your watermelon. Or try banana + peach. Here are some other great combinations to add to your fermented smoothies.
Preserve the old world by sharing it in the real food revolution. If you get a chance to find yellow watermelon at your local farmers market, this would make a great smoothie! Of course it has an excellent source of beta carotene. Historically, watermelon originated in south Africa and had yellow or white flesh.
Ingredients
- Watermelon rind
- Apple cider vinegar
- Water
- 1 Tbl chopped ginger
- 2 Tbls chopped mint
- 1/4 C honey or maple syrup (optional)
- 2 tsp sea salt (optional)
- Watermelon
- optional-cucumber, banana, peaches, spinach, kale, carrots. Any fruit really!
Instructions
- Cut watermelon rind into cubes. Place in mason jar. Cover with 1 part water, one part apple cider vinger to make sure rind is covered with liquid. Add ginger, mint, sweetner (optional), and sea salt to mixture. Let it sit in refrigerator overnight. Don't forget to use your watermelon seeds! Pour about 1/4 cup of mixture into a fruit smoothie.
