Pickled Watermelon Rind With Mint & Ginger

Soak the seeds for a few days and change the water every day.  Rinse and roast the seeds low and slow at 325 degrees for 15 minutes. Season them with oil or butter and your favorite seasonings like salt or cinnamon.The preperation is similiar to roasting pumpkin seeds after you have carved your halloween pumpkin!

Pickled Watermelon Rind With Mint & Ginger

Ingredients

  • Slices of watermelon rind
  • 1 Tbl minced fresh ginger
  • 2-3 Tbl chopped fresh mint
  • 1 1/2 C Apple cider vinegar
  • 1 1/2 C water
  • 1/3 C honey (optional) or drizzle on top
  • 1 Tbl salt (optional) or pinch of sea salt to finished recipe

Instructions

  • Chop up pieces of watermelon rind, ginger, and mint. Add them to the liquid mixture. Place in refridgerator overnight.

If you want to minimize the salt and sweetner, just drizzle some honey and a pinch of sea salt to your finished summer treat!
