Black Rice Stuffed Squash

From our last post we made Crispy Squash Rings with flavorful spices that can be a great healthy snack! Here is another creative recipe for Delicata squash. Just cut the squash into rings, roast them and stuff them with rice, vegetables, and diced chicken if you would like.
Forbidden black rice is an ancient grain form India. It is especially different then brown rice in that it has the powerful antioxidant anthocyanin which gives it is black hue. Black rice doesn’t go through any refining process compared to white rice, so it retains its immune system fighting nutrients that can be good for imflammation as well. The phyto-nutrients in black rice can be a natural detoxifier and cleanse the liver.

Ingredients
- 1 Delicata Squash
- 2 cups black rice or brown rice
- Warm spice seasonings: cumin, cinnamon, coriander, garlic, allspice, chiptole.
- Or pumpkin spice blend
- Bell peppers, kale, or spinach, optional
Instructions
- Turn squash on its side and cut into 2-3 inch rings. Cover with butter or coconut oil. Dust with spices. Bake in oven at 400 degrees until tender (20-30 minutes)
- Black rice instructions: Add 4 cups water to pot and boil, add rice and simmer on low heat until tender. Cooking instructions are the same for brown rice. Season the rice with salt and butter or coconut oil. Add any garlic or spices to the rice if preferred.
