Black-Eye Pea Hummus

Black Eye Pea Hummus

Ingredients

  • 4 cups dried black eye peas
  • 2 tablespoons olive oil
  • 1 garlic clove minced
  • 1 teaspoon coriander
  • 2 teaspoon cumin
  • 2 teaspoon dried oregano
  • 1 red bellpepper
  • sea salt to taste
  • 2 tablespoon olive oil
  • squeeze of half of lemon

Instructions

  • Soak black eye peas in mason jar full of water overnight. Rinse and drain legumes. Boil 8 cups of water with a covered lid until boiling. Add legumes, cover with lid, and boil on low for 20-30 minutes. Split bell pepper in half a take seeds out. Roast in oven at 375 degrees until soft, about 20-30 minutes. Add all ingredients to food processor.
