Strawberry Avocado Quinoa Lettuce Wraps

Fresh, light, and summery with a hint of crispness is how to describe this lettuce wrap with strawberry salsa, avocado and quinoa. You want real food….real fast….real delicious? This has a nice tartness with the strawberries, a satisfying creaminess from the healthy fat of the avocado, a nice boost of protein and nuttiness from the quinoa, ended with a nice chilled crunch of romaine to balance it out. Oh…and it takes less than 15 minutes to make!

If you’re going gluten-free or you’re just trying to add more veggies to your diet, lettuce wraps can be a satisfying alternative to flour wraps.

Have you ever wanted to grab something healthy at the grocery store and decide to go for a pre-made wrap and then you look at the 20+ ingredients and additives in it? This is why it is so important to read food labels. You can make an easy unprocessed wrap at home!

You can usually buy a fresh head of organic romaine for $2-3 dollars. You can make at least 8 wraps for a week!

Ingredients

2 serving:

Strawberry Salsa

1 cup chopped strawberries

1 garlic clove diced

1/4 to 1/2 cup chopped cilantro

squeeze of lime or 1/2 teaspoon of apple cider vinegar

pinch of salt

optional, bit O’honey to taste

 

Avocado

Slice or mash 1 avocado. Add a pinch of salt to taste (optional-pinch of cumin).

 

Quinoa

3/4 cup quinoa. Bring 1 1/2 cups water to a boil.  Add quinoa and simmer with lid on for 20 minutes.

Soak the quinoa overnight if you can. Sprouting the grains turns them into “living grains” that release more enzymes and nutrients.

Make sure you wash all produce before preparing your meal, even if the lettuce was pre-packaged. Natural herb washes may have the power to stand up to microbes that lead to foodborne breakouts where synthetic washes have failed.

I can’t get over how dark green this local farmer’s romaine looks! Some things just never look like that in the super market anymore! You can see the sprouted quinoa with all of its “living food” goodness. Yes, it’s that easy to choose simple. Choose tasty. Choose healthy.
